Our sourdough crackers are made the true Italian way - 100% hands-on! Our manufacturers take special care and oversee the entire process. Manufacturing a true sourdough product is very difficult and rare to find. In fact, it took us quite a while to find the wonderful experienced, artisan, small-scale, family-owned bakery that we now partner with. They had been baking bread for more than 50 years and they also believed in the benefits of preparing food the way our ancestors did. The facility is also dedicated free from eggs, milk, soy, tree nuts, peanuts, shellfish and seafood.
It takes almost 24 hours to prepare one batch of crackers, but these artisan bakers truly understand the benefits of this hands-on baking process and are proud of the end results. The morning before baking, they refresh the sourdough starter and then before going home for the night, they mix in the first dough or pre-ferment, additional einkorn flour and water, then leave the dough to rest for the night. Early the next day, our dedicated bakers mix in the rest of the ingredients and leave the dough to rise. Mid-morning the dough is turned and left to rise again. Then the dough is rolled out, cut into strips, then squares, dusted with sea salt and left to rise yet again. The crackers are then baked slowly, then left to cool before packing and shipping.
